Pizza x 2 (mine vs. Kashi)

Another presto dinner… it was so good, and I was very hungry and I ate it in a flash, basil garnish and all. You’re lucky it even got photographed! Who says healthy cooking has to be complicated or bland? Next time I have some turkey pepperoni hanging around, you can bet it’s going in one of these! I can hardly wait.

Pizza Wrap

Dress it up just as you would your own pizzeria slice, with garlic powder, oregano, hot pepper, etc. Personally I’m a fan of lots of red pepper flakes and enough garlic powder to keep the vampires away.

2 garlic cloves, chopped
1 zucchini, sliced into half-circles
1 cup sliced mushrooms (you’ll see oyster mushrooms in the photo, but regular white ones work perfectly)
1/3 cup tomato sauce or pasta sauce
2 lowfat string cheese, cut into pieces
pinch of salt
1 large high-fiber wrap
(optional: garlic powder, hot pepper flakes, oregano)
Coat a large pan with nonstick spray and add garlic, zucchini, and mushrooms. Cook over medium heat, stirring, until vegetables are softened, about 5 minutes. Stir in tomato sauce and cheese, and continue to cook until cheese is melted. Add salt and other seasonings as desired, and pile the filling onto the tortilla (on a plate). Wrap tortilla around filling and dig in! (You may need a knife and fork, depending on how liquid the sauce you’re using is.)

Another pizza experience this week to share: Kashi Thin Crust Roasted Veggie Pizza. Though we aren’t regularly frozen pizza eaters, I thought I’d give it a try. I’d give it a B for taste. It didn’t have nearly as many veggies as the box photo, but the nutritional stats were decent and the ingredients list wholesome, as I would expect from Kashi. For 1/3 of the pie, you get 270 calories, 9 g fat, 32 grams carbs (4 g fiber), and 14 g protein. Trouble was, the pizza was smaller than I expected. After removing the box, it was clear that this was a lunch for one. So I took one bite for a taste test and Val had it for lunch while I made something else for me. We agreed that although it was tasty enough, we wouldn’t buy it again due to the cost. ($6)
