My considerate husband made me breakfast the other day when I was home sick from work. (Of course, I did sleep until midday so you could call it lunch.) He knows I always start the day with eggs, veggies and coffee, but it’s especially nice when someone else makes it for you.
Val’s Skillet Eggs
6 eggs, beaten
handful of baby spinach
1 chopped tomato
1 chopped hot pepper
sliced mushrooms
Cabot 75% light cheddar
