Mashed Butternut Squash

1 lb. butternut squash (peeled, seeds removed)

½ cup water

1 T smart Balance light

1 T Splenda granular (or 2 packets)

1/8 tsp salt (optional)

Cut the squash into 1” chunks and place in a small saucepan with a lid. Add the water and simmer, covered, for about 40 minutes, or until squash is very tender. Drain liquid, and stir in Splenda, Smart Balance, and salt. Mash roughly with a fork, leaving some chunks is quite okay.

Makes 2 servings, about 1 cup each
