2 more salads, and Pulled Pork Recipe

A couple more salad pics:

Baby spinach topped with pulled pork, fat free feta and roasted red peppers. I threw this together in a hurry when I was starving and ate it in about 10 seconds.
And below that, here was my salad I brought to work. Spring mix, fat free feta, chopped yellow apple, dried plums, red cabbage. Fruity and sweet. I topped it with Raspberry Vinaigrette dressing.
Okay LG, I hope you’ve gotten some salad ideas. Everybody else, my apologies for posting 8 billion salad pics lately. I’ll try to add some more variety :)

In case the pulled pork I mentioned sounded good to you, here’s the recipe:
Pulled Pork
2 pork tenderloins (1-1.5 lbs each)
1/2 cup cider vinegar
2 Tablespoons chili powder
2 T worcestershire sauce
Place the tenderloins in a slow cooker, and add the remaining ingredients on top. Cook on HI for 5-6 hours. Done! Serve with BBQ sauce if desired. Makes awesome sandwiches and wraps, but I often use it on a salad as shown, or just eat it with a side of cooked veggies.
