If you can boil water and work your blender, you’re set. Really. To boot, this is so filling that if I make this soup and eat it all, I can’t eat dinner for a while after. (And if you know my appetite that’s pretty darn incredible.) It’s a great speedy warm-me-up and fill-me-up soup that you can make in just 5 minutes.
1 pkg. (10 oz) frozen cauliflower 1 cup chicken broth or 1 tsp Better than Bouillon + 1 cup water 3 wedges Laughing Cow Light cheese garlic powder & pepperPlace the cauliflower and broth (or bouillon + water) in a pot, and bring to a boil for 1 minute. Transfer to a blender pitcher, and add Laughing Cow Light cheese. Place the top on the pitcher, and blend on high for 30 seconds or until smooth. Add a dash of garlic powder and a generous sprinkling of black pepper. Enjoy!

Makes 1 big serving, or 2 “starter course” servings.
