I haven’t yet posted my Protein Ice Cream recipe which I am eating almost every night – so it’s time I think! This will also be the first recipe in my Vitamix Recipe section!!! You’ll swear you are enjoying a Wendy’s Frosty with this recipe. You may have never heard of xanthan or guar gums – they aren’t in most people’s kitchens, but it’s well worth picking them up – they are essential for creating thick and creamy smoothies and ice creams, they aren’t expensive or unhealthy in any way. Before I got these two ingredients, I would always find my ice creams kind of icy and “crystally” if I didn’t use some sort of frozen fruit – and I was determined to make straight up vanilla and chocolate ice cream. Once I found them – problem solved.
Chocolate Protein Vitamix Ice Cream
1/2 cup skim milk or nondairy milk 1 scoop chocolate whey protein powder 2 tablespoons unsweetened cocoa powder 3 packets Splenda or Equal sweetener (or stevia) 1/2 teaspoon xanthan gum 1/4 teaspoon guar gum Ice cubes1. Place all the ingredients except ice cubes in Vitamix pitcher, and blend on lowest speed just to mix. Add ice to about the 600 ml mark. Secure lid and select Variable 1 setting. Turn Vitamix on and increase speed to Variable 10, then High. Tamp like crazy for about 30 seconds, or until the sound of the motor changes (and it looks like ice cream, duh.) Don’t blend for too long or it will start to melt.
Enjoy immediately or scoop into a bowl and place in freezer to firm up more. This is only 1/2 portion in the pic
Its quite a big serving – about a pint! Serves 1 if you like ice cream as much as me, could serve two if you are more moderate.
Nutrition Facts (whole thing) : 180 calories, 2 grams total fat, 2 grams sat. fat, 10 grams carbs, 2 grams dietary fiber, 30 grams protein
Chocolate Banana Protein Ice Cream
Add in 1/2 frozen banana before the ice, and still add ice cubes up the same level. (In other words, use frozen banana instead of some of the ice.)
Chocolate Peanut Butter Ice Cream
Add in peanut butter, peanut flour, or salted peanuts.
Strawberry Protein Ice Cream
Use vanilla protein and cup frozen strawberries in place of some of the ice.
Heck with the oncoming winter – It’s always ice cream season in my opinion!!! Now someone get me a sweatshirt, my lips are blue…

is it even worth trying this in a regular blender or will it just fail and be gross b/c of the difference in power?
i am also an optimum whey gal, same flavors as you. i use their casein in cookies and cream and its pretty good so i’d be hopeful about the whey. sampler pack sounds awesome!

I don’t think it would be gross but I’d worry about the survival of the machine……I don’t know any blender which is capable of getting a smooth consistency except the vitamix and the blendtec, given so little liquid and so much ice. But what I would suggest is adding a bit more milk and making a thick thick smoothie. Thanks for leaving a comment Rachel!

Oh Georgie………..My vitamix arrived today and I just finished my first serving of fresh pumpkin ginger ice cream.
I am in love. Thanks for the recipe for ice cream it was just the push I needed to order the vitamix.

About how many ice-cubes is this? I’m going to try this recipe in my ice-cream maker:)

Hm, I don’t think it will work in an ice cream maker!!! You need to pulverize the ice, not freeze the mixture.
