There’s not a lot to say about this except that it is even yummier than it looks. Hearty and beefy with warm spices, excellent served over zucchini noodles or spaghetti squash. Enjoy!
1 lb extra lean ground beef 1 and 1/2 cups pumpkin or other pureed winter squash 1/4 tsp cinnamon 1/8 tsp cloves 1/4 tsp cayenne 1/2 tsp salt 1 onion, chopped 6 garlic cloves, minced 3 tomatoes, chopped1. Brown beef, breaking up with wooden spoon.
2. Add onion and garlic and cook until soft.
3. Add squash, cinnamon, cloves, cayenne, salt, and tomatoes. Simmer for 5 minutes. Serve over zucchini noodles.
Serves 3
