Roasted Red Cabbage

Attention roasted vegetable lovers, you will go nutty over this one. Roasted red cabbage is my new addiction, and I can’t wait for you to try it! It’s super easy. It tastes a lot like roasted Brussels sprouts, but only the best crispy parts. And it costs about half as much. And it takes less oven time. Just make it already.

300 grams (10 ounces) red cabbage, shredded
2 teaspoons olive oil
salt
 

1. Preheat oven to 400 degrees F. Toss cabbage and olive oil in a large mixing bowl to coat, then spread on baking sheet. Sprinkle with salt and bake 20 minutes.

Served with cooked ground beef mixed in. Yum.

I ate it all, but in most instances it would probably serve 2.

    Cabbage, especially red cabbage is one of my favorite cruciferous veggies, but I’ve never thought of roasting it. I have a head of green cabbage in my fridge and am tempted to roast it! Green cabbage is not as thick or crunchy as red so it might not turn out as crispy but it’s worth a try.

    Georgie, I’ve been eating this for days now… I’ve made a batch for 3 days straight and eat them all myself! Cabbage crack, I tell you!
