Sour Cream & Onion Cauliflower Mash

You could fool anyone into thinking this is whipped potatoes. And the best whipped potatoes ever, at that. Awesome accompaniment to that meatloaf recipe I posted not long ago. Comfort food for winter that’s healthy? Sign me up!

1 pound cauliflower, chopped
1/2 tsp salt
1/2 tsp onion powder
1/4 cup light sour cream
black pepper to taste, opt.

1.Bring a pot of water to a boil and add the cauliflower. Cover and boil until very tender, then drain all the liquid away in a colander.

2. Transfer cauliflower to a blender pitcher, add remaining ingredients, and process. You’ll need to stop the blender a few times and stir /push it down to get it all to blend (if you have a vitamix use the tamper). Once it’s all moving, crank the blender to the highest speed to obliterate any clumps.

You don’t need a vitamix, I used to make this in a regular Osterizer blender with great results. You just have to stop a lot more and push the top cauliflower down to the blade. If you have an immersion blender, by all means use it.

It’s incredibly delicious and satisfying, but contains much fewer calories than mashed potatoes. Plus, you can see non-vegetable fans in your household scarfing down 1/2 lb of cauliflower apiece with glee. We never have leftovers of this recipe, ever.

Makes 2 large servings: 94 calories, 3 g fat, 14 g carbs, 6 g fiber, 5 g protein
