Speedy “Baked” Apple

Fall is most definitely here, and with it the arrival of abundant fall apples, trick-or-treaters, and chilly nights. I’m always an apple lover, but this time of year my fondness for the popular fruit is in high gear! Check out your local farmers market or grocery store for new apple varieties, especially local ones! Honeycrisp, Jonagold, and Macoun are just a few of the names you might find, but this simple recipe works with any type of apple.  It takes just a couple minutes – no oven needed – and you can enjoy a warm fall dessert that’s deceptively healthy.

So tomorrow, when the candy distribution is in full swing, consider treating yourself to a warm spiced apple instead of raiding the Halloween candy. You’ll feel better for it, I promise! DSC_0859

Chopped Spiced Apple Treat

1 apple, chopped finely

1 tsp Splenda granular sweetener (or 1 packet)

1/2 tsp cinammon

2 tsp diced walnuts

Chop the apple and place in a microwave safe bowl. Cook for 60-90 seconds, then stir in Splenda and cinnamon. Top with diced nuts and enjoy!!!

    I just wanted to tell you that ever since I found your site and saw this recipe, I have been eating this for dessert quite frequently!!! It’s a much better choice than ice cream or baked goods!!!

    I love how you use the microwave also – it basically eliminates any room for excuses. If you have more recipes like this I hope you post them soon!!!
